Cow liver is so delicious and is such a nutritious dish which I love serving with Ugali. So let’s make some stewed liver that should be a staple in any home.
(*Tip: to get rid of the metallic taste that liver has, you can soak it in milk prior to cooking)
Half kilo of liver (cleaned)
1 large onion
2 medium sized tomatoes
Salt and pepper to taste
Brown the liver in a hit pan and set aside.
Sauté your onions and peppers until soft and translucent
Add the tomatoes and coriander cook for a further 2-3 minutes
Season with cumin, salt and pepper. Add the tomato paste.
Add the liver, cook for 3-5 minutes. Reduce the heat to medium and add water and allow to simmer for 10-15 mins.
